The Best Mashed Potatoes In the World

A recipe for mashed potatoes??  Aren't they pretty self-explatory?  Boil potatoes, mash them up, add a little milk, butter, salt & pepper and you're good to go. Right?  I don't blame you for thinking this post might be a waste of your time- the truth is that if you've never tasted these holiday baked mashed potatoes you just don't know what you're missing! 

We are very pro- mashed potatoes at our house.  My husband grew up in Idaho for heaven sake, so our children have it in their DNA to love potatoes.  While I'd never turn down a plate of traditional mashed potatoes, I'd take these holiday baked mashed potatoes over the regular stuff ten times out of ten!  Basically they are just a delicious (and even more unhealthy) spin on mashed potatoes.  Who doesn't love a little more butter, sour cream & cream cheese?  The great part about this recipe is that you can make them the night before thanksgiving, let them sit overnight and pop them in the oven just before it's time to eat.  Less work for you on the big day!

Serioulsy though, try these and you'll never, ever go back to regular mashed potatoes.  
 

Holiday Baked Mashed Potatoes

12 Medium potatoes, peeled and quartered
1 8 ounce package cream cheese, cubed
1/4 cup butter, softened
1/2 cup sour cream
1/2 cup milk
2 eggs
4 green onions, finely chopped
1 teaspoon salt
1/4 teaspoon pepper

Boil potatoes in salted water in large saucepan, cover and cook until tender.  Drain and place in large mixing bowl.  Beat until smooth.  Add cream cheese and butter, beat until smooth and stir in sour cream.  
In a small bowl, blend milk, eggs, onions and seasonings.  Add to potato mixture and whip until light and fluffy.  
Pour into a greased 9x13 glass baking dish; cover and refrigerate several hours or overnight.
Bake uncovered, 45-60 minutes at 350 degrees or until puffed and golden brown.

Traeger Brisket Recipe

Whenever I want to impress someone who comes to dinner, I throw a brisket on my Traeger. It’s always a hit and, honestly, is super easy. With barely any prep and a few check-ins here and there, you’ll be able to have a meal no one will stop talking about! Here’s the Traeger brisket recipe I always use. 

Traeger Brisket Recipe

Beginners Smoked Beef Brisket

Ingredients:

1 (6 LB) BRISKET FLAT, TRIMMED

TRAEGER BEEF RUB, AS NEEDED

2 CUPS BEEF BROTH, BEER OR COLA

1/4 CUP APPLE CIDER VINEGAR, APPLE CIDER OR APPLE JUICE

2 TBSP WORCESTERSHIRE SAUCE

TRAEGER TEXAS SPICY BBQ SAUCE, OR YOUR FAVORITE BBQ SAUCE

Directions: 

When ready to cook, set temperature to 180℉ and preheat, lid closed for 15 minutes.

Season the on both sides with the Traeger Beef Rub.

Make the Mop Sauce: In a clean spray bottle, combine the beef broth, beer, or cola with apple cider vinegar, and Worcestershire sauce.

Arrange the brisket fat-side down on the grill grate and smoke for 3 to 4 hours, spraying with the mop sauce every hour.

Increase the grill temperature to 225℉ and continue to cook, spraying occasionally with mop sauce, until an instant-read thermometer inserted in the thickest part of the meat reaches 204℉, this should take about 6 to 8 hours.

Foil the meat and let it rest for 30 minutes. Slice with a sharp knife across the grain into pencil-width slices.

Serve with BBQ sauce. Enjoy!

*Cook times will vary depending on set and ambient temperatures.

 

A few tips! From my experience, the time you cook the meat doesn't matter as much as the internal temperature of the meat, so you'll want to invest in an instant-read meat thermometer. You'll also want to save any leftovers to make brisket tacos! They're delicious!

How to Plant Grass Seed

Last spring, we completely ripped up our exhisting yard and planted new grass seed.  We crossed our fingers and toes and hoped that it would grow----- and it did.  In fact, six weeks after planting the seed it looked like an entirely new lawn!  It was a lot of work, but in the end it was definitely worth it.  If your grass needs a re-fresh, or you just moved into a new home that doesn't have grass yet, now is the perfect time to take care of it!  In fact, they say planting seed in the fall is the very best time of year.  Here are 10 steps to help you plant a beautiful new lawn...

1. Kill exhisting lawn and/or weeds.  Use a broad spectrum plant killer.
2. Wait for the grass to die (this can take 2-3 weeks)
3. Prep the soil by roto tilling to remove any more exhisting weeds and debris.
4. Continue prepping the soil by making soil amendments (you can send a sample of your soil to a local co-op extension and it will tell you how much nitrogen, lime, and any other soil amendments that need to be made).
5. If you need to, add a thin layer of top soil.
6. Plant the seed with a broad cast spreader. 
7. Rake in the seeds so that they are 1/4 inch deep
8. Roll over the lawn with a rolling pin (you can rent these at the Home Depot) so that the seed has good contact with the soil.
9. Water daily for 2-3 weeks, or until the seeds germinate.
10. Don't mow grass until it's 3-4 inches long, and don't fertilize for 8 weeks.
