TRAEGER TURKEY RECIPE
Prep Time: 30 minutes, overnight brining
Cooking Time: 7 Hours

Rub: Traeger BBQ Rub
Meat: 12-16lb Turkey (thawed, remove giblets)
Ingredients: 3 gallons of water, 1 cup of Traeger BBQ rub, 1 cup of sugar, 1.5 Tbsp. minced garlic, 1/2 cup worcestershire sauce, 2 Tbsp. canola oil
Traeger Smoked Turkey Instructions
Pour 3 gallons of water & BBQ rub into a non-metal bucket and mix until dissolved. Add garlic, sugar, and worcestershire sauce and mix thoroughly. Place the turkey breast side down in the bucket, make sure it's completely submerged in your liquid mix, cover with lid and place in the fridge overnight.
The next day, remove your turkey and pat dry. Rub canola oil all over turkey surface and place in a disposable aluminum pan, breast side up.
Start your Traeger grill on the smoke setting with the lid open to establish a fire. This should take the usual 4-5 minutes. Place turkey on grill, close the lid, and smoke for 2.5 - 3 hours. Next, switch to 350F and cook for 2.5 hours or until internal meat temp reaches 170F. Remove turkey from grill and let it rest for 15 minutes. Slice, serve, and become a champion!

First, you'll want to generously coat your brisket with your chosen rub. This could be a ready-made rub from the store or a secret family recipe you've perfected over the years. Make sure you cover every nook and cranny of that brisket. The rub infuses it with a world of flavor and forms a tantalizing crust on the meat as it cooks.
Once your brisket is nicely coated, wrap it up tightly in plastic wrap. This helps the rub to stay in place and allows the flavors to deeply penetrate the meat. Then, it's time for a little rest – pop your wrapped brisket in the fridge for a good 12-24 hours. This chilling period lets the rub do its magic, tenderizing the meat and infusing it with all those delicious flavors.
Following these steps sets the stage for a brisket that's poised to be the star of your meal. The key is in the preparation - giving your meat the time to soak in those flavors ensures a result that's packed with taste and tenderness.

- Place the foiled meat back on the grill until the temperature probe reads 200F-205F. To ensure your brisket is ready, test the brisket by inserting the temperature probe into different parts of the brisket. The probe should slide into the meat easily, like butter.Â
- Remove the brisket and allow it to rest for 30 minutes. Then it's time to eat!  Â

TRAEGER PRIME RIB RECIPE
Prep Time: 5 minutes + 24 hours rest
Cooking Time: 3.5 Hours
Servings: 8-12
Wood Pellets: Cherry or Hickory
Rub: Traeger Prime Rib Rub
Meat: 5-7 Bone Prime Rib
Traeger Prime Rib Instructions
Rub the prime rib with Traeger prime rib rub. Wrap it in plastic wrap and let it rest in the fridge for 24 hours. Turn your Traeger grill onto the smoke setting with the lid open until a good fire is established - usually takes 4-5 minutes. Turn the heat up to 375F and preheat your Traeger grill with the lid closed for 10-15 minutes. Once the Traeger is heated, take the plastic off your prime rib and place it fat side up on the grill grate. Then turn the heat back down to 300F. Close your lid and let the Traeger prime rib slow cook for 3-4 hours, based on your taste.
Internal meat temperatures will be 130F for rare, 145F for medium and 160F for well done.
Remove the Traeger prime rib roast from the grill, cover it with foil and let it rest for 15 minutes before carving and eating!
