Pineapple Smoked Salmon
This easy recipe only requires 4 ingredients! The sweet pineapple gives this salmon a nice light taste, perfect for dinner on a warm summer evening.
Ingredients:
1 Fillet of Fresh Atlantic Salmon
1 Fresh pineapple: 1/2 cup crushed/chopped and 1-4 slices to put on top (depending on how big your fish is)5 Tbsp of brown sugar (half this is you have a small salmon fillet 1lb or less)Traeger Fin & Feather Rub (Traeger Grill Fin and Feather Rub | RC Willey)
Instructions:
- Fill your Traeger Grill pellet box with Alder or Mesquite pellets and turn on the Traeger to the smoke setting or 180 degrees F.
- Cut pineapple into round slices. Set 1-4 slices aside, enough to cover the length of the salmon fillet. Then take a few of the slices and chop them smaller for the glaze.
- Put chopped pineapple and brown sugar in a small saucepan on the stovetop and heat on low. Mix together for about two minutes until a warm glaze forms.
- Place the salmon on a piece on a doubled-up piece of aluminum foil and pinch up the corners of the foil to form a shallow bowl.
- Pour an even coat of pineapple glaze on top of salmon.
- Top salmon with a light covering of the Traeger Fin & Feather rub (about 1/2 a tsp) or a BBQ seasoning of your choice.
- Add the slices of fresh pineapple on top of the fish.
- Smoke salmon in the Traeger for 20-30 min.
- Leave the salmon in the Traeger and turn up the temperature to 375 degrees F. Cook for another 15-20 min or until the salmon reaches an internal temperature of 145 degrees F.10.Pull the salmon off the Traeger and allow to cool. Then ENJOY!
German Pancake
Dave Anderson, a sales associate from our Salt Lake Store, shows us just how versatile a Traeger can be with his German Pancake recipe. These are great to bake for brunch or a weekend family breakfast.
Ingredients:
For German Pancake:
- 9 Tbsp Butter
- 1 ½ Cup Milk
- 9 Large Eggs
- ½ tsp Salt
- 1 ½ Cup All-Purpose Flour
Toppings for Serving:
- Maple Syrup
- Honey Butter
- Berries
- Powdered Sugar
Instructions:
- When ready to cook, fill your Traeger pellet box with Apple, Cherry, or Pecan pellets. Start the Traeger on smoke for 4-5 minutes to establish the fire. Turn the heat up to 425 degrees F and allow the grill to preheat with the lid closed for 10-15 minutes.
- Place butter in a 10 x 15 glass baking dish and set in Traeger while the temperature raises to 425 degrees F.
- In a mixing bowl, combine milk and eggs. Whisk thoroughly.
- In another large mixing bowl, combine flour and salt. Sift the mixture. Slowly whisk in the milk and eggs until the batter is relatively smooth.
- By this time, the butter should be fully melted. Add batter to melted butter and close grill.
- Cook for 25 minutes. When complete, the edges should have risen above the pan by 1-3".
- Cut and serve with syrup, powdered sugar, honey butter or berries. Serves 6. Enjoy!
